How a casual beach-bar dream became Punta Cana's award-winning home for seafood and steak.

It started with a single sentence. Michael and Sylvia Livingston were sitting at a beachside restaurant in Aruba, feet near the sand, when Sylvia said something almost offhand. "You know, this is kind of cool. One day we should have our own beach bar." Most couples would have smiled, finished their drinks, and let the idea fade with the tide. Michael did not. Two months later, he was on a plane to the Dominican Republic, meeting with realtors and chasing a vision that would soon become one of the most celebrated dining destinations in Punta Cana.

A Dream That Refused to Fade

In July of 2021, Castaways Bistro Restaurant opened its doors in Los Corales, the lively heart of Punta Cana. For Michael Livingston, the leap was less reckless than it looked. He brought forty-four years of hospitality experience to the venture, having worked in both independent and corporate venues across nearly every title the industry offers. He understood kitchens, guests, and the delicate rhythm that turns a good night out into a memorable one.

What he needed was the right chef. As fate would have it, he came across the resume of Frisnert Lubin almost by chance. Impressed, Michael set up an interview for the very next morning. That quick decision turned into one of the most productive partnerships on the Punta Cana scene.

The Chef Behind the Flavor

Chef Lubin's story reads like a culinary journey across the Atlantic. Born in Haiti, he absorbed the bold flavors of the island long before he ever stepped into a professional kitchen. He later moved to Boston, where he sharpened his craft at some of the finest venues in Massachusetts. From there, he joined various cruise lines, constantly learning and expanding his skill set with every port and every plate.

That experience shows in the food. At Castaways, the fish is delivered fresh by local fishermen three times a week. Guests can order octopus, calamari, mussels, shrimp, lobster, langoustines, and even fresh conch, each prepared with care and precision. The kitchen does not cut corners. In fact, there is not even a microwave in the building. Every dish is made with top-quality ingredients and genuine technique.

The results speak loudly. In 2025, Luxe Magazine named Castaways the Best Seafood and Steak Restaurant in Punta Cana. The restaurant also holds a 4.9 TripAdvisor rating and has earned the TripAdvisor Certificate of Excellence in 2022, 2023, 2024, and 2025.

More Than Seafood

While the ocean inspires much of the menu, Castaways is far from one-dimensional. Steak lovers will find a lovely Brangus Ribeye, a tender Filet Mignon, and a flavorful Churrasco. Chef Lubin's signature stuffed chicken breast has become a favorite in its own right. The menu also includes thoughtfully built salads, pastas, and gnocchi dishes that round out the experience for every kind of appetite.

Then there is the lobstercargot, a signature appetizer that regulars talk about long after the meal. Large chunks of lobster are sautéed in garlic butter with parsley, placed in puff pastry, then filled with heavy cream and a secret ingredient the kitchen refuses to divulge. The whole creation is topped with parmesan cheese and baked until golden. One bite, and most guests are hooked.

The praise is not limited to the staff. "Most delicious Lobster Bisque I have ever had," wrote Nadia H. Rick G. called it the "best dinner experience we had in Punta Cana." Rhona T. summed up the loyalty Castaways inspires with a simple line: "So worth the 36 minute drive from our resort."

A Bar Built for Surprises

The full bar at Castaways delivers exactly what one would expect from a tropical escape, and then a little more. Guests can dive into coco locos, mojitos in several flavors, classic piña coladas, and the famous goombay smash, which comes with a friendly warning to pace yourself.

The real surprise, however, is the whiskey and bourbon collection. Castaways boasts the largest and most exclusive whiskey and bourbon selection anywhere on the island. It is an unexpected treasure in a beachside bistro, and a detail that keeps connoisseurs coming back.

Entertainment keeps the week lively as well. Guests can enjoy karaoke on Tuesdays, music trivia on Fridays, and live music on Sunday nights. For those who prefer a calmer evening, the air-conditioned interior offers a quiet retreat away from the energy of the patio crowd.

What Truly Sets Castaways Apart

Plenty of restaurants claim to be special. Castaways proves it in ways guests can feel. "Our chef is a real chef for starters, not a cook with a title," Michael explains. That difference shows in every plate that leaves the kitchen.

Just as important is the philosophy behind the service. At Castaways, the people who walk through the door are never treated as clients or customers. They are guests. That mindset shapes the casual, friendly, and genuinely warm atmosphere. It is not uncommon to see guests high-fiving the staff on their way out the door, a small gesture that says everything about the connection Castaways builds.

The accolades continue to pile up. Castaways has been featured among the Top 30 Restaurants by "Everything Punta Cana" in both 2024 and 2025, named a Top 15 restaurant by the "Family Destination Guide," ranked in the Top Ten by RestaurantGuru in 2024 and 2025, and crowned the number one restaurant in Punta Cana by U.travel in 2024. These are not accidents. They are the product of consistency, passion, and a refusal to compromise.

A Story Still Being Written

The dream that began with a casual comment in Aruba is still growing. Buoyed by the success of the original, the Livingstons are opening Castaways #2, bringing their signature food, service, and spirit to even more guests. For a venue that opened its doors in 2021, the expansion is a remarkable testament to how quickly genuine quality earns loyalty.

Paradise, as the Castaways team likes to say, really does exist. And it tastes a lot like fresh lobster, perfectly seared steak, and a tropical cocktail enjoyed with people who feel like old friends.

For those planning a trip to Punta Cana, Castaways Bistro is worth including in the journey. Reserve a table, order the lobstercargot, explore that remarkable bourbon list, and discover why so many guests say the drive is worth every minute. Come as a visitor. Leave as part of the Castaways family.
